The coffee comes from the Los Patios processing center in Colombia’s Huila region, which specializes in experimental processing of specialty coffees. This lot consists of the Caturra variety, a traditional Colombian variety that is processed here using a somewhat unconventional method. Los Patios doesn’t just focus on classic coffee processing; it also experiments with fermentation and various methods to extract the most interesting flavors from the coffee cherries. This is precisely what results in coffees that can differ significantly in flavor from typical Colombian lots.
This lot was processed using the Honey Process – Cherry Co-ferment method. In the honey process, the cherry skin is removed after harvest, while some of the pulp remains on the bean during drying. This lot also employs co-fermentation, during which the coffee comes into contact with other cherry components. The beans are then dried until they are ready for further processing. It is precisely this combination of the honey method and co-fermentation that gives the coffee its intense fruity flavor, which clearly evokes cherry candies in the cup.
