Colombia JUAN MARTIN from the Czech roastery Mia Coffee is a clean and harmonious filter coffee that combines fresh fruitiness with a pleasant sweetness. The flavor profile features citrus and pear, which give the coffee a light and juicy character, while caramel adds a sweeter and rounder note. The resulting cup is elegant, balanced, and very clean. This is a coffee that doesn’t rely on pronounced fermentation or a heavy profile, but rather on the subtlety and clarity of its individual flavors.
Finca Juan Martin is located near the city of Popayán in Colombia’s Cauca region and is owned by Banexport. The farm serves as an experimental and research center where various varieties, cultivation methods, and processing techniques are explored. Banexport subsequently shares the experience gained at the farm with producers across Colombia with whom it has long-standing partnerships. This lot consists of the Pink Bourbon variety grown at an elevation of 2,050 meters above sea level. The Cauca region offers high altitudes, volcanic soils, and a cooler climate, which create ideal conditions for producing specialty coffee.
The coffee underwent the Oxidation Washed method, which is based on the washed process but adds a controlled oxidation phase before the actual washing. The coffee cherries are first briefly exposed to oxygen, and only then do the subsequent steps of the washed process continue. The goal is to enhance the coffee’s natural sweetness, fruitiness, and complexity while preserving the clean character of the final cup. It is precisely this combination of controlled oxidation and washed processing that perfectly suits the character of this lot, which remains elegant, balanced, and precise in flavor.
