The coffee comes from Peru, specifically the Cajamarca region, which is among the most important and productive coffee-growing areas in the entire country. It is a semi-dry to semi-cool tropical region in the northeastern highlands of Peru, where fertile soils and high-altitude conditions create excellent conditions for producing specialty coffee. Today, Cajamarca accounts for roughly a quarter of all Peruvian coffee production. Most of the coffee here is grown on small farms ranging in size from about two to three hectares, and many local growers farm organically. Behind this lot is Rony Lavan, an ambitious, quality-focused cupper who has long been dedicated to seeking out more distinctive and higher-quality coffees from small Peruvian producers. The variety is a blend of Catimor and Caturra, grown at an elevation of 1, 650– 1, 800 meters above sea level.
The coffee is processed using the washed method, which gives it clarity, stability, and a very well-defined flavor profile.
