This Costa Rican specialty from Quickborn Roastery offers the perfect balance between fruity freshness and nutty richness. The star of the show is creamy strawberry yogurt, which forms an incredibly smooth and sweet base. This is seamlessly complemented by raisins, which deepen the overall profile and add a subtle sparkle. The finish belongs to pecans, which provide a smooth and rounded aftertaste. Every sip represents a perfectly structured and harmonious interplay of all the flavors present.

This specialty coffee comes from the renowned Tarrazú region of Costa Rica. It was grown on the Los Reyes farm at an elevation of 1,400 to 1,600 meters above sea level. The harvest of the popular Catuaí variety always begins in December, when the cherries reach their absolute peak of ripeness. The entire harvest is carried out strictly by hand under the supervision of an experienced team. Workers carefully select only flawless and fully ripe fruits, which forms the absolute foundation for top-notch quality.

Processing is carried out using an innovative “natural process” method that includes a resting phase. Immediately on the day of harvest, the whole cherries are sealed in airtight bags for 12 hours, where the first phase of controlled fermentation begins. The cherries are then transferred to raised African beds. Here they dry slowly for 26 days until their moisture content drops to exactly 11%. The coffee is then returned to the sealed bags for another 3 days to promote secondary lactic fermentation ( a type of controlled fermentation in which lactic acid bacteria play a key role), which significantly deepens its complexity. Finally, the green beans rest for 2 months to allow the entire flavor profile to stabilize perfectly.
