Colombia LOS CEDROS is a special edition from our dog-loving friends at The Naughty Dog roastery that will delight any lover of elegant and complex filter coffees. This fresh harvest of the Geisha variety offers a sweet and exceptionally clean flavor profile with a pleasantly higher, lively acidity. In the cup, delicate notes of jasmine and roses gradually unfold, complemented by a playful sweetness reminiscent of PEZ candies. The long finish is enhanced by a hint of spiced tea, which adds depth and refined elegance to the entire experience. This is a coffee that, from the very first sip, will reward you with its lightness, complexity, and exceptionally clean flavor profile.
Behind this lot is farmer Oswaldo Toro, who grows coffee trees at an elevation of 1,750 to 1,850 meters on the Los Cedros farm in Colombia’s Huila region. It is precisely the high-altitude conditions, cooler climate, and fertile soil here that create the ideal environment for the Geisha variety, which is prized for its distinctive aroma and delicate floral elegance. The coffee comes from the fresh spring 2026 harvest, allowing it to retain maximum freshness and vibrancy of flavor.
The lot was processed using the washed method, one of the most traditional ways of processing specialty coffee. After harvesting, the pulp is removed from the cherries; the beans are then fermented in water and subsequently carefully washed and dried. This process highlights the purity of the flavor profile, the clearly defined acidity, and the delicate floral and tea notes characteristic of high-quality Geisha. The result is an exceptionally elegant cup with a long, sweet aftertaste that fully showcases the character of this exceptional variety.
