The flavor is dominated by notes of strawberries, cream, and milk chocolate, which truly evoke strawberry ice cream. Expect a truly full-bodied, round, and juicy coffee that will reliably remind you of summer. If you love bold strawberry notes, you’ll enjoy this from the very first sip, and you definitely shouldn’t miss out on it.

The beans for this coffee were grown high in the mountains of the southern Colombian province of Huila, in the village of San Agustín, home to a vibrant community of coffee farmers who grow some of the most exceptional coffee beans in the region. Located at an altitude of 1,750 meters above sea level, this area is known not only for its ideal conditions for growing coffee but, thanks to its rich archaeological heritage, is also listed as a UNESCO World Heritage Site. Local farmers carefully cultivate prized coffee varieties such as Pink Bourbon, Caturra, Colombia, and Castillo, which grow in harmony with the surrounding forests.

This coffee is processed using an experimental method. The process begins with manual sorting, during which only ripe cherries are selected and impurities such as leaves or pits are removed. The cherries then undergo a 24-hour pre-fermentation in plastic bags, followed by a 24-hour fermentation in the cherries. After the pulp is removed, the beans undergo anaerobic fermentation with yeast and strawberries for 5 days, which enhances the rich, fruity, honey-like flavor. Finally, the coffee is mechanically dried for 10 days to ensure uniform moisture content, and then stabilized for 5 days in special GrainPro bags.

Process: Pour water over the coffee; after 4 minutes, break up the crust, then stir the bottom of the French press for about 2–3 seconds. Let it steep for 5–6 minutes, then carefully pour it out; discard the last approximately 30 ml.
