From the Gedeb region of Ethiopia comes the limited edition Lalesa Slow Dry from Father’s Coffee Roastery, created in collaboration with Kofio. This exceptional coffee brings flavors of blueberry cheesecake, lemon curd , and white flowers that unfold in a silky sweet and clean cup. The slow dry natural processing method gives it depth, an elegant structure, and a long honey-fruit finish. Lalesa is not just coffee. It is the story of a place with heart and people who put more than just work into every bean. A limited edition that is only produced once a year and is worth tasting before it disappears!

Lalesa is an area in the heart of the Gedeb region , known for its exceptional sweetness and complexity of flavors. The coffee is processed by Ephtah Specialty Coffee, led by an inspiring woman named Wubit, who believes that coffee can be an instrument of change. She provides work for local women, supports education, and builds a community where quality, fairness, and the future come together in a single cup. "This is not just a plant," says Wubit, "it is our future." And it is precisely this philosophy that forms the essence of Lalesa, a coffee that connects the world of Father's Coffee Roastery with the people behind it.

The slow dry natural process takes 20 to 25 days on raised beds in a greenhouse, after which all imperfections are carefully washed away. This process slows down drying, allows for even fermentation, and highlights the natural sweetness and floral notes of the Heirloom varieties . The result is a coffee with delicate acidity, rich body, and exceptional clarity that develops with each pour. The limited edition Lalesa Slow Dry is more than just a Christmas rarity; it is a symbol of the connection between people, places, and values that give coffee its true meaning.

This is my first Aeropress coffee, and so far I haven't found a better one. No matter what recipe I try, I always find a hint of blueberry.

Grinder (setting): 700 microns, or even coarser
Process: Add 200 ml of water, then add the coffee and stir for 20–30 seconds. After 105 seconds, flip and complete extraction within 20 seconds.

Process: Inverted, add coffee to the Aeropress, bloom with 50 ml, stir immediately, and let sit for 40 seconds. Top up to 220 ml, stir twice, and press after 2 minutes. Perfect for the morning :)

I love it. Intense and clean lime and blueberries note. I tried a lot of recipe and I never find the cheesecake note or similar.
