Christmas is coming! And as a gift for you, Father’s Roastery has prepared a festive coffee. You’ll taste the flavors of Christmas that will transport you to the atmosphere of a Christmas market. A combination of spicy cloves, mandarins, milk chocolate, and Christmas incense? Well, it’s almost like a warm glass of mulled wine. You can look forward to a coffee that will truly enchant your holidays with its sweetness and warmth, complemented by the subtle, lively acidity of mandarins. This coffee is roasted for drip brewing, but if you’re in the mood for an espresso, don’t worry—you’ll find it in our selection as well.
The beans came to us from the Huabal region of Peru. Here, farmer Presbitero Herrera Torres grows coffee trees in the village of San Antonio. His farm, La Fila, spans just two hectares, and Presbitero cultivates 9,500 coffee trees there. The farm is a family business, and during harvest season, Presbitero employs both his family and pickers from nearby villages. He manages the farm conscientiously, using no chemical fertilizers, pesticides, or fungicides; instead, he fertilizes with compost mixed with natural fertilizer. Since 2022, he has been supplying beans to Falcon Coffees, from which the Father’s roastery also sources green beans. In 2024, Presbitero enrolled his farm in the Falcon Specialty Plus program, which provided him with a soil analysis, a fertilization plan, and equipment for measuring and processing coffee. This includes, among other things, training and visits by agronomists directly to the farms. So you can be sure that this coffee is brimming with quality! Inside the bag, you’ll find the Catuai and Pache varieties.
The coffee was processed using the natural method in a solar dryer. During this process, the entire coffee cherry—including the skin—is dried, which imparts a more pronounced fruitiness and intense flavor. The dried coffee is then stored in special airtight bags, which are placed inside polypropylene bags, and these are then stored on pallets. From there, they’re shipped out into the world so that roasters can bring them to you.
