Ethiopia CHELBESA from the Ostrava-based roastery Father’s Coffee Roastery is a return to what makes washed Ethiopian coffees so exceptional: purity, elegance, and a flood of floral notes. The roastery knows this coffee well and returns to it regularly thanks to its long-standing relationship with the producer, Ephtah Specialty Coffee. In the cup, you’ll find a delicate aroma of jasmine, fresh bergamot, the sweetness of peach tea, and a honey-like aftertaste. The light to velvety body is complemented by a lively yet perfectly balanced acidity that allows the character of the high-altitude Ethiopian varieties to shine through.
The coffee comes from the Gedeb region, where coffee trees grow in the natural shade of trees, often alongside false banana trees, which are an important part of the local people’s lives. From December through January, small-scale farmers deliver ripe coffee cherries to the Chelbesa processing station, operated by Ephtah Specialty Coffee. The company builds long-term partnerships with growers, ensures fair compensation for high-quality harvests, and supports the development of local communities. An important part of its work is also supporting women, who play a key role in the Ethiopian coffee industry.
This coffee was processed using the washed method, which highlights the purity of the flavors and fresh, fruity acidity. After being hand-harvested, the cherries are sorted in a water bath, then stripped of their skins and pulp, and fermented in tanks without water. They are then thoroughly washed and dried for approximately 10 to 15 days on raised African drying beds. Dozens of experienced workers oversee the entire process during the harvest. The result is an exceptionally clean and elegant cup that fully showcases the floral aroma, delicate citrus freshness, and long, sweet aftertaste typical of the best washed coffees from Ethiopia.
