Brazil is not only a football and samba powerhouse, but also a long-standing undisputed leader in global coffee production.Cocatrel Cooperative was founded in 1961 in Tres Pontas and has now grown to become the second largest cooperative in Brazil. It has more than 6,000 members and 11 different purchasing points throughout the region. All coffee is electronically tagged and recorded upon delivery using a unique QR code. This allows for full traceability of all coffee, so that growers know exactly where their coffee is located. More than 50% of the cooperative's members grow coffee on plots of less than 10 hectares. Our coffee comes from a branch of the cooperative called Cocatrel Direct Trade, which works to source the best coffees from across the cooperative.
In the dry method, after harvesting, the cherries are spread in a thin layer on concrete patios or African beds, where they are dried. Alternatively, mechanical dryers are also used for drying. The coffee must be turned regularly to prevent mold growth and unwanted fermentation. When drying is complete, whether in the sun or in a dryer, the husk is mechanically removed in a so-called dry mill.
