If you’re looking for a coffee that’s sure to please absolutely everyone and never gets old, you’ve just found it. The name Tierra Linda translates to “beautiful land,” and this lot perfectly reflects the serene character of its origin. The flavor is dominated by warm gingerbread, which forms a very rich and soothing base. After a moment, juicy sour cherries playfully join in, adding the essential fruity spark. Finally, a light hint of lemon balm tea beautifully rounds it all out. It’s a very drinkable and versatile coffee that works great with all brewing methods.
The beans come from two neighboring farms located in the Dipilto area of Nicaragua’s Nueva Segovia region. The first is Finca Santa Isabel, situated at an elevation of 1,220 meters above sea level, which the family has successfully managed for more than 70 years. The second farm is Finca Mirjam, situated at an elevation of 1,252 meters above sea level, which the family purchased in 2025. Together, the two estates cover 18 hectares of coffee plantations, where the Caturra, Catuaí, Parainema, and Catimor varieties are grown. Local farmers work with great respect for nature. They grow the plants in partial shade beneath a canopy of banana trees and fruit trees, use their own compost made from coffee pulp, and strictly protect 15 hectares of pristine native forest on their land.
This lot is processed using the classic washed method, with a strong emphasis on ecology and environmental sustainability. After careful hand-picking, the harvest is first sorted in a water bath and then allowed to rest for 18 hours. Beans from the Santa Isabel farm pass through a hulling machine and ferment in paved tanks for 24 to 36 hours. The Mirjam farm does not have its own processing equipment, so the harvest is sent to the nearby family-run Bethania station for processing, where the team adheres to the exact same strict procedures. After being thoroughly washed with clean water, the coffee—protected by its parchment—is transferred to the Cafetos de Segovia dry mill for safe storage. Furthermore, both washing stations minimize water consumption and divert all wastewater to special oxidation tanks, thereby actively protecting local waterways.
