Ethiopia BENSA AYLA from the Czech roastery Father’s Coffee Roastery is a coffee with a sweet flavor profile. A distinct white chocolate flavor unfolds in the cup. Immediately afterward, however, the typical tartness of ripe black currants sets in, beautifully enlivening the drink. A light floral aftertaste reminiscent of pansies only confirms that you have the privilege of enjoying a truly meticulously processed coffee.

The green beans come from the Ayla processing station, located in the Bombe area of the well-known Ethiopian region of Sidama. Approximately 725 small-scale farmers from the vicinity of the village of Shentawane supply their coffee cherries here. Their small family plantations are located at an impressive elevation ranging from 1,950 to 2,150 meters. Under these ideal conditions, growers primarily cultivate the local varieties 74110 and 74158. The area’s unique microclimate, combined with the thinner mountain air, allows the cherries ample time to ripen very slowly. The result is a raw material with tremendous flavor potential, resulting in a bright and sweet character.

This lot was processed using the traditional natural method with meticulous attention to detail. Upon delivery to the station, the farmers first hand-sorted out the unripe cherries and then submerged the entire harvest in a large water bath. Lightweight and defective cherries floated to the surface and were immediately removed by workers. Only the heaviest and healthiest beans made their way to the raised African drying beds. There, the coffee was spread in a layer about 5 cm thick. The team carefully turned the entire surface 5 to 6 times a day to ensure even drying and prevent unwanted fermentation. This process took 15 to 21 days, depending on the current weather. It was precisely this lengthy drying process inside the whole, intact cherries that gave the coffee ample time to absorb the immense sweetness and fruitiness from the pulp.
