When prepared using a filter, you can expect the aroma of meadow flowers and delicate jasmine, accompanied by pleasant acidity and notes of forest fruits and honey sweetness, which together create a juicy, complex yet smooth taste experience.
The origin of this coffee lies high in the Ethiopian mountains, where the altitude reaches around 2,200 meters above sea level and the cool climatic conditions force the cherries to ripen slowly, which is key to the development of the coffee's profile. Daye Bensa, the family business behind the processing of this coffee, is one of the most respected producers in Sidama and has long supported small farming communities not only by purchasing their harvest, but also by investing in infrastructure and education. Rumudamo itself is also considered one of the most prestigious areas for Ethiopian coffee.
The natural (dry) processing of this coffee begins with the careful harvesting of fully ripe coffee cherries. After harvesting, they are dried whole, including the pulp, which allows the sweetness and aroma to develop. The subsequent drying takes place on raised African beds, where the cherries are spread out in a thin layer and turned regularly. Good air circulation and a controlled drying rate ensure even drying. Only after reaching the ideal moisture content are the cherries stripped of their dried pulp and the coffee is ready for further processing and roasting.
