Sweet, creamy, and slightly spicy—that’s this Nicaraguan FINCA MASSIF from the Czech roaster Doubleshot. It’s the first-ever harvest from producer Luis Miranda’s new Massif farm. The aroma features spices and fresh orange zest, while the flavor gradually unfolds with notes of dark chocolate, wild berries, and red wine. The result is a fuller-bodied and distinctly sweet cup with fruity depth that evolves pleasantly as it cools, revealing a slightly different side of Nicaraguan coffee.

Behind this coffee is Luis Miranda, who was born and raised in Nicaragua on a small family farm. After studying in California, he chose to return to farming rather than pursue a career in the private sector, and later immersed himself fully in the world of specialty coffee. From 2015 onward, he worked in Panama, where he developed his own approach to cultivation based on environmental sustainability, long-term relationships, and a focus on quality. In 2022, he returned to Nicaragua and founded Finca Massif, a project focused on restoring neglected land, organic farming, and working with varieties that offer interesting flavor profiles. This lot comes from the Cordillera Dipilto-Jalapa region in the north of the country, where one part of the project is located in a nature reserve near the village of Mozonte at an elevation of approximately 1 ,400 to 1,650 meters above sea level. It consists of a blend of the Caturra, H3, and Catigua varieties.

The processing combines two fermentation methods. Approximately 40% of the lot undergoes dry fermentation, while the remaining 60% ferments in water. Luis thus works with different environments during fermentation and subsequently blends the two parts into the final lot. After fermentation, the coffee is dried on wooden African drying beds and then finished drying in shaded concrete courtyards at the Beneficio Las Segovias processing plant, where Luis also works as a quality control inspector.
