Bella Vista is a blend of micro-lots of the Bourbon variety from several different producers (mostly 5-15 families) in the area around the town of San José Poaquil, north of the tourist center of Antigua, Guatemala. Harvesting and processing are supervised by Mr. Luis Pedro Zelaya, owner of the Bella Vista plantation, who buys all the coffee from these producers and with whom the Doubleshot roastery has been working for 8 years.
Fazenda Ambiental Fortaleza is the name of a well-known farm owned by the Croce family, located in the state of Sao Paulo and famous for its approach to organic farming. This coffee is a blend of micro-lots from about 10 producer families in the Caconde region who have been working with the Croce family for a long time. The coffee was harvested in September 2022 from Catuaí coffee trees and processed using the dry method.
Coffee from Brazil is processed using the natural method. After careful selection, the cherries are spread out on raised beds, where they slowly ferment and dry naturally in the sun. The beans are turned regularly to ensure even drying, which gives the coffee its typical sweetness and intense fruity aroma. In contrast, coffee from Guatemala is processed using the washed method. Farmers selectively pick ripe cherries, which are then stripped of their pulp using mechanical hulling machines. Fermentation takes place for 12 to 24 hours, after which the beans are washed with clean water and dried in the sun until they reach the desired moisture content. This washed process ensures a clean and clear coffee flavor.
