The beans come from the Finca Momoto farm in the Santa Clara area of Panama’s Chiriquà region. The farm is located at an elevation of about 1,500 meters above sea level, near the border with Costa Rica, and is managed by Aliss Hartmann, who comes from the well-known Hartmann coffee family with Czech roots in Moravia. Aliss gradually restored the originally neglected farm and today focuses on growing exceptional coffee varieties with an emphasis on nature, biodiversity, and sustainable processing.Â
This micro-lot underwent natural (dry) processing, a method in which Finca Momoto has long specialized. In this process, the coffee cherries are dried whole—including the pulp and skin—which helps develop sweetness and a distinctive fruity character. During drying, Aliss draws on experience with traditional shaded African drying beds and, in recent years, has also utilized modern enclosed dryers with controlled humidity. The entire process is carefully monitored and managed, allowing the beans to dry evenly and retain their pure aroma and flavor stability. It is precisely this emphasis on precise drying that is one of the main characteristics of this farm’s production.
