Uganda Zebigi from the Czech roastery Father's comes from eastern Uganda and is intended for all lovers of clean and elegant filter coffees. In the cup, subtle notes of chamomile tea, the sweetness of butter cookies, and juicy pomelo unfold, creating a harmonious and well-balanced flavor profile. Thanks to a combination of washed processing and dry fermentation, the coffee retains a bright acidity, rich body, and pleasant sweetness. The result is a clean, complex cup with a light tea-like character and a long, refreshing aftertaste.
The coffee comes from the Mt. Elgon region in eastern Uganda, where it is grown by partner farmers in the Zebigi area in collaboration with The Coffee Gardens. The coffee trees grow at an elevation of 1,800 to 2,200 meters above sea level, where volcanic soil, a cooler climate, and rich biodiversity create ideal conditions for the slow ripening of coffee cherries. This blend of the SL14, SL28, and Nyasaland varieties combines the best of each—the delicate tea and citrus notes of the SL14, the pronounced fruitiness and sweetness of the SL28, and the light floral character of the historic Nyasaland variety.
The coffee is processed using the washed method with dry fermentation. After the parchment is removed, the beans are allowed to ferment without the addition of water, which promotes the development of sweetness and complexity in the final cup without compromising its clarity. This processing method highlights the natural character of each variety, preserves a bright acidity, and contributes to a fuller body. Thanks to careful processing, the result is a balanced cup with elegant tea-like notes, subtle sweetness, and a fresh, fruity finish.
