Colombia ENIGMA from the Spanish roastery Brewing Dealers is a distinctly fruity Colombian coffee that combines freshness, sweetness, and a slightly dessert-like character. In the cup, sweet mandarin and crisp green apple emerge first, lending the coffee a lively and juicy acidity. Gradually, notes of caramel and toffee emerge, rounding out the profile and giving it a pleasantly sweet base. The result is a complex pour-over with clearly defined notes and a cupping score of 87. If you enjoy coffees with pronounced fruitiness and a sweet finish, Enigma is exactly the kind of cup that will delight you from the first sip until it cools.

The coffee comes from the Campo Hermoso farm in the Quindío region of Colombia, where it is produced by Edwin Noreña at an elevation of around 1 ,600 meters above sea level. He is a third-generation coffee producer, as well as an agronomist and certified Q Grader. The Campo Hermoso farm serves as a center for experimental processing, where Edwin works with his own microbiology, multi-stage fermentations, and coffee infusions to precisely shape the resulting flavor profile. This lot consists of the Caturra variety, a natural mutation of Bourbon, which is prized for its clean expression, bright citrus acidity, and balanced sweetness.

Processing is carried out using the honey co-fermentation method. Hand-harvested cherries with high sugar content first undergo a 24-hour pre-fermentation in a low-oxygen environment, followed by a 48-hour carbonic maceration, during which a fruity must is produced. Active yeast and dried cranberries are then added separately, and the mixture ferments for another 72 hours. The coffee is then hulled to the “black honey” stage and re-immersed in this fermentation medium to absorb more pronounced fruity and sweet notes. Finally, it is gently sun-dried. The result is a clean, intense, and layered cup with pronounced notes of mandarin, green apple, and a sweet caramel finish.
