The beans were grown on the legendary Lamastus family estates, specifically at the renowned Elida Estate. The family’s tradition here dates back to 1918, and today it represents the absolute world leader in the cultivation of specialty coffee. The coffee trees grow on volcanic soil at extreme altitudes ranging from 1, 670 to 2,100 meters above sea level. In terms of botanical origin, this is the iconic and highly prized Geisha variety, which has found its ideal environment in Panama. The coffee was processed using the classic natural method. Carefully selected, fully ripe dark red cherries were left to rest overnight and then slowly dried for approximately 30 days on elevated African drying beds, with constant and precise turning. This gentle drying process allowed the beans to absorb all the natural sugars from the pulp, giving the coffee intense sweetness, a full body, and a perfectly distinct, refined character—perfect for a top-quality pour-over.
