Blossom, from the Spanish roastery Brewing Dealers in Málaga, is a Colombian coffee with an intense and highly unconventional flavor profile. Juicy pineapple brings tropical freshness, chocolate adds a deeper sweet note, and a syrupy texture pleasantly rounds out the entire cup. The result is a full-bodied, aromatic, and complex filter coffee that showcases the distinctive character of the rare Ombligon variety and experimental processing methods. Brewing Dealers was founded by Leo and Vedrana and focuses on selecting lots with distinctive character and unusual profiles.
The coffee comes from Finca Anaya in Colombia’s Huila region, where it is grown by Sergio Aranda at an elevation of around 1, 600 meters. His family has been growing coffee on the farm for more than thirty years, and today Sergio combines his many years of experience with a meticulous approach to harvesting and processing. The cherries are handpicked with an emphasis on optimal ripeness, and during sorting, methods such as measuring sugar content using the Brix scale and flotation are employed. Ombligon is a rare variety recognizable by its elongated bean shape and a distinctive indentation resembling a navel—its name derives from the Spanish word “ombligo.” In the cup, it offers a full body, pronounced sweetness, and an intense fruity character.
A key factor in Blossom’s flavor is its natural co-fermented processing, which involves several steps. First, a fermentation culture is prepared over 48 hours using fresh red and green apples. This culture is then added to whole Ombligon cherries, which undergo anaerobic fermentation for another 48 hours in sealed tanks. The whole cherries are then dried for approximately 12 days on raised beds. It is precisely this combination of long fermentation, fruit, and natural processing that gives the final cup its intense sweetness, tropical character, and fuller texture.
