SUDOKU from Amsterdam-based DAK Coffee Roasters is a delicate yet vibrant and lively coffee made from the Geisha variety. In the cup, you’ll find notes of wildflowers and fresh mint, complemented by a subtle citrus note. The roastery has chosen a light roast for this exceptional washed coffee, so it’s best enjoyed brewed with a filter.
The coffee is grown by Yeisson Fabian at the El Vergel farm in the Acevedo region of Colombia’s Huila province, at an elevation of 1,600 meters above sea level. Behind this lot is the Sudus Coffee Project, a Colombian organization dedicated to the sustainable cultivation and export of specialty coffees, as well as planting flower corridors to support biodiversity in the coffee-growing landscape. Geisha is a variety native to Ethiopia that ranks among the most valuable and sought-after varieties in the world. Cultivating it is challenging, and yields are typically low, making each lot a true rarity. In Colombia’s high-altitude conditions, it has the space to develop its exceptionally floral and fruity profile.
Every bean of this coffee undergoes very strict quality control and is then processed using the classic washed method, which suits Geisha perfectly. The washed method preserves the clarity and transparency of the cup, allowing the variety’s character to shine through without any distracting notes.
