The flavor profile of this lot embodies the purest elegance the Geisha variety has to offer. The entire sensory experience is dominated by intense and captivating floral notes that blend seamlessly with the delicate and fresh aroma of citrus blossoms (lemon blossom). All of this is set against an incredibly light, smooth body with a distinct hint of premium white tea. The roaster opted for a very gentle, light roast intended exclusively for filter brewing, giving the coffee an extremely clean structure and an endlessly long, refreshing finish without any heavy notes.
The beans were grown in the Caranavi region on the renowned Finca Alasitas farm, owned by the Los Rodríguez family (operators of the Agricafe export project). The coffee trees grow here at an elevation of 1,650 meters above sea level in an optimal high-altitude microclimate. The collaboration between DAK Coffee Roasters and the Rodríguez family is now in its fourth year, and it is their washed Geisha that the entire roasting team looks forward to the most each season. Every bean undergoes an incredibly rigorous inspection, with the final manual sorting taking place at the La Luna dry mill under both natural light and special UV lamps to eliminate even the smallest imperfections.
Behind the breathtaking purity and complexity of Pearl Drops coffee lies a technological process that borders on science. After being hand-picked, the whole cherries were weighed, sorted, and disinfected in a special machine that the family nicknames La Maravilla (The Miracle). They were then transferred to stainless-steel tanks for 48 hours, where, under the strict supervision of fermentation specialist Adrián Silva, controlled fermentation took place with the addition of selected yeasts (mosto). The sealed tank lids created carbon dioxide pressure, which triggered so-called intracellular fermentation, locking all the intoxicating fruity and floral aromas within the beans. After washing, the coffee was dried for 110 hours in mechanical Guardiola dryers, and the process was completed in rotating Coco dryers until the optimal moisture content of 11.5% was reached.
