The processing combines the Natural and Co-Ferment methods. Some of the coffee cherries undergo controlled fermentation with red fruits, which enhances the intensity of the fruity notes and adds more pronounced sweetness and complexity to the cup. The other portion is processed using the Natural method, in which the cherries are dried whole, allowing the beans to absorb natural sugars from the pulp during drying.
