Juicy, clean, and with a distinct apple character—that’s APPLE from the French roastery People Possession. The roastery is known for its penchant for unusual flavor profiles and its bold approach to specialty coffee. This time, however, it has opted for a classic in which apple plays the leading role—hence the coffee’s name. Behind the People Possession project are two coffee enthusiasts who wanted to create a brand that pushes the boundaries of the traditional world of specialty coffee. Their philosophy combines the careful selection of interesting lots, precise roasting, and an aesthetic inspired by underground culture.
The coffee comes from the Cusco region of Peru, specifically the Pacaybamba area in the Incahuasi district, where coffee trees are grown at an elevation of 2,300 to 2,400 meters above sea level. Behind this lot is producer Fred Huacgihuilica, who farms in the high-altitude region of the Peruvian Andes. Local farmers face challenges posed by the rugged mountain terrain and the remoteness of their farms. Therefore, the Cooperativa Incahuasi—a cooperative bringing together small-scale producers—plays a vital role in helping them bring their coffee to the international market.
APPLE consists of the traditional Typica and Bourbon varieties, which are processed using the washed method. In this process, the skin and pulp of the coffee cherries are removed after harvest, followed by the removal of the remaining mucilage layer, and the beans are dried to the desired moisture content. This processing method allows the coffee’s natural character to shine through.
