Granja Paraiso 92 from the Tanat roastery is a coffee that combines the intense sweetness of chocolate with the delicate fruitiness of cherries. In addition to chocolate notes, you’ll find hints of cherry liqueur and a delicate scent of violets in the cup. The chocolate base gives the coffee a pleasant depth and full body, while the cherry liqueur notes bring fruity sweetness, and the floral notes beautifully lighten the overall profile. The result is a complex cup of espresso with a distinctive character that maintains a pleasant balance between sweetness and fruity notes.
Behind this coffee is the renowned Colombian producer Wilton Benitez, who grew it on the Granja Paraiso 92 farm in the Cauca region of southwestern Colombia. The coffee trees grow here at an elevation of 2 ,100 meters above sea level, where cooler mountain conditions slow the ripening of the coffee cherries and promote the development of their complex flavor potential. Cauca is known for coffees with lively fruity acidity, pleasant sweetness, and delicate floral notes.
This lot consists of the Red Bourbon variety, which is prized for its natural sweetness, balance, and chocolate and fruity notes. The coffee underwent a washed process with double-controlled fermentation, during which Wilton employs advanced inoculation in bioreactors. This process allows for careful control of the fermentation process and the targeted development of the coffee beans’ aromatic potential. It is precisely the combination of the Red Bourbon variety and this innovative processing that gives rise to an unusual flavor profile, in which rich chocolate sweetness blends with the intensity of cherry liqueur and a delicate floral finish of violets.
