Paloma Coffee Roastery presents a Colombian Gesha that combines tropical fruitiness, pronounced sweetness, and a pleasantly complex character. The flavor profile features juicy pineapple and melon, with fruity notes of cherry and the sweetness of floral honey. The entire combination is complemented by dark chocolate, which adds a deeper contrast to the fruity part of the profile. The result is a vibrant and elegant coffee that showcases the Gesha variety from a slightly different angle, with plenty of sweetness and more intense fruitiness.
The coffee comes from Finca Las Brisas, a five-hectare farm in Acevedo in Colombia’s Huila region. Behind it is producer Lisandro Cardenas Castro, who grew up among coffee trees and later built on his father’s experience by studying coffee production in the SENA program. He founded his own farm nearly ten years ago and today grows the Caturra, Pink Bourbon, and Gesha varieties there. This entire lot consists solely of Gesha. The coffee trees grow at an elevation of 1,400 to 2,000 meters, and the harvest took place in 2025.
The cherries were processed using the natural method, in which carefully selected ripe fruits are dried whole. In Colombia’s humid and rainy conditions, this processing method requires meticulous selection, patience, and continuous monitoring during drying. For this lot, therefore, the slow drying of whole cherries—during which the beans remain in contact with the pulp—plays a crucial role. The result is a coffee with intense fruity sweetness that also retains a clean and complex character.
