Goodnight is a coffee whose very name suggests an evening cup, but its flavor certainly won’t put you to sleep. This decaf Colombian blend from the Dutch roaster Sprout Coffee Roasters features a sweet and creamy profile, where juicy orange meets caramel and a delicate almond cream. The resulting cup is full-bodied, sweet, and pleasantly smooth, while a citrus note adds a refreshing touch. Sprout roasts it as an omni roast, so you can enjoy Goodnight both as a pour-over and as an espresso.
Behind this coffee is Elias Roa and his farm, Finca Tamana, located in the Pital region of Huila, Colombia, where the coffee trees grow at an elevation of approximately 1 ,650 meters above sea level. This lot consists of the Colombia variety. Elias has long been connected to the local coffee community and was one of the founding members of the Asociación Primaveral in Acevedo. Moreover, coffee is truly a family affair for the Roa family. His wife Bellanid, his daughter Derlin, and his son-in-law Diego Campos—who won the title of Colombian Barista Champion—all contribute to the production.
Even before decaffeination, the coffee undergoes approximately 14 to 16 hours of dry fermentation, several washings with clean water, and slow drying on raised beds. Next comes EA decaffeination using ethyl acetate. The beans are first steamed for 30 minutes at low pressure to open up their structure, and then immersed in a solution of water and ethyl acetate, which binds to the caffeine. The bath is repeatedly refreshed over the course of about 8 hours until no caffeine is detectable. Finally, the beans are steamed again, dried, and polished. It is precisely this gentle processing that helps preserve the coffee’s sweet, clean character even after the caffeine has been removed.
