The coffee comes from Ethiopia’s Jimma region and is associated with Mustefa Abakena’s farm, located at an elevation of approximately 2 ,040 meters above sea level. Mustefa also collaborates with smallholder farmers in the surrounding area, from whom he purchases freshly harvested coffee cherries, and invests in training, modern equipment, and sustainable farming practices. The coffee is certified organic, meaning it comes from organic farming. The varieties used are Heirloom, 74110, and 74112, and the coffee achieved a cupping score of 86.25 points.
The beans were processed using the washed method. The coffee cherries first ferment in water tanks and are then dried for 24 to 27 days on raised African drying beds. The washed processing helps maintain a clean, light, and distinct flavor profile, which in this Ethiopian coffee beautifully highlights the combination of black tea, lime, and acacia honey. The result is an elegant filter coffee with a delicate body, lively acidity, and a long finish, which beautifully showcases the fresh character of Ethiopian coffees from the Jimma region.
