TEOPONTE from the Prague-based roastery Birdsong Coffee is a clean and light espresso with lively acidity and a very interesting flavor profile. In the cup, you’ll find notes of matcha cookies and panels. A creamy, buttery aftertaste then rounds out the entire cup nicely. It’s suitable for a lever espresso machine or a moka pot.
This coffee comes from the Bolivian Andes , where it’s grown by 120 farmers united in the APCERL association . Seven farming communities are located in the subtropical valleys of the Madidi National Park , one of the most biologically diverse regions in the world. Here, coffee trees aren’t grown in intensive monoculture but in an agroforestry system that preserves the tree canopy and provides space for other plants and animals. Farms managed in this way help protect local biodiversity and create natural corridors for wildlife. For local farmers, shade-grown cultivation is not just a method of production; they view it as a tool that allows them to use their land while protecting the natural wealth of the region in which they live.
The APCERL Association has been farming organically since 2002 and has been certified as Bird Friendly® since 2014—a certification from the Smithsonian Institution that ranks among the strictest organic standards for coffee cultivation. However, simply meeting the requirements of organic farming is not enough. Bird Friendly® also sets specific requirements for preserving shade, the tree canopy, and species diversity on the farms. The farms in Teoponte grow the Catimor, Catuaí, and Caturra varieties , each with its own distinct character, which together create a balanced and clean profile. The coffee then undergoes a classic washed processing method , which allows the natural flavors of the varieties and the region’s terroir to fully shine through.
