Juicy peaches, crisp apples, and caramel-like sweetness set the tone for this “Peach on Earth” coffee from Colombia, roasted by Oh My Bean. This filter-roasted coffee will particularly delight lovers of distinctly fruity flavors. The peachy character is accompanied by a more pronounced acidity, which adds freshness to every sip. The medium body and sweetness allow the fruity notes to shine through without making the coffee feel heavy. You can look forward to the perfect coffee for cozy Advent days.
The beans come from the Finca El Paraíso farm in Colombia’s Cauca region, where they grow at an elevation of 1,960 meters above sea level. Behind their production is Diego Samuel Bermúdez, who began growing coffee in 2008 on his family’s land. At the time, he financed his studies by selling cherries to local cooperatives. He gradually shifted his focus to fermentation research and, together with his brother and cousin, founded INDESTEC, a company that develops coffee processing technologies. Rigorous monitoring of temperature, pH, and microorganisms has become a fundamental part of his work.
This lot consists of the Pink Bourbon variety, named for its pink-orange cherries. The washed processing method involves double fermentation with Paraíso tropical yeast. This is followed by a thermal shock, during which the beans are heated and then rapidly cooled with cold water, halting fermentation. The coffee is then dried in a dehumidifier, which allows for controlled moisture loss and minimizes oxidation. Before final sorting and hulling, it rests in a cold storage facility, where it stabilizes.
