The beans come from the El Mesón farm, located in the renowned Acevedo area of the Huila region. Behind this production are Luz Divia Fierro and her husband Elpidio, who represent the emerging young generation of progressive growers in Colombia. Their approach is based on absolute precision and social sustainability, as evidenced by their close collaboration with the Pickers Project, through which harvesters are rewarded with above-average wages for their skilled work. The coffee grows in optimal climatic conditions that allow the Pink Bourbon variety to develop its specific genetic potential. It is precisely thanks to the combination of careful cultivation and Huila’s unique terroir that this coffee achieves exceptional clarity, placing it among the top offerings of the season.

The key to this coffee’s intense sweetness is its specific washed processing method with an intermediate resting phase. After being hand-picked, the cherries are left to rest for a full 24 hours, allowing the sugars from the pulp to interact more effectively with the bean itself before the skin is removed. Subsequent washing and drying highlight the aromatic intensity and add a depth to the cup that is often less pronounced in classically washed coffees. The resulting cup is proof that even traditional methods, in the hands of innovative farmers, can deliver a modern and very clean tasting experience.
