This Colombian coffee from the Slovak roastery Kaffa is a refreshing experience. In the cup, it delights with a distinctive, juicy acidity dominated by passion fruit. This is followed by notes of pomegranate and ripe plums, which add depth and a subtle wine-like undertone. A subtle sweetness reminiscent of cane sugar holds the entire profile together and balances the intense fruitiness. The body is medium-full, smooth, with a clean flavor progression. The finish is long, sweet, and fruity, with a subtle fermented note that underscores the cup’s complexity.

This coffee exemplifies the current direction of Colombian specialty coffee production, where precise work on the farm is combined with experimental processing. Behind the project is the El Vergel Estate, led by brothers Elias and Shady Bayer, who are among the pioneers of modern fermentation methods in Colombia. Their approach combines controlled processes, collaboration with other farmers, and a focus on maximizing the potential of each harvest. El Vergel Estate also functions as a central processing station where coffee from smaller producers is brought together, thereby standardizing quality and opening the door to innovative lots. The cherries come from the regions of Huila, Tolima, and Caldas—areas with ideal conditions for growing coffee. An elevation of around 1,750 meters above sea level, a stable climate, and volcanic soils slow down the ripening process, allowing for the development of complex acidity and sweetness.

The processing method plays a crucial role, combining the washed method with controlled co-fermentation using passion fruit. Co-fermentation takes place after a short anaerobic pre-fermentation of whole cherries to develop sweetness and structure. After depulping, the coffee ferments with added passion fruit and specific yeasts, with all conditions precisely controlled to enhance fruitiness and preserve the purity of the profile. Subsequent washing and slow drying stabilize the resulting character, which combines the clarity of a washed coffee with distinctive, juicy fruitiness. A cupping score of 87.8 only confirms that this is truly an exceptional coffee worth tasting.

A very pleasant co-ferment

You can only smell the passion fruit
Fruity in both cold brew and V60
For me, it tastes best when served chilled in a V60 (it cuts through the passion fruit's acidity)
Even though I like co-ferments, this one just didn't work for me in cold brew
Passion fruit is very sour; I don't really think this fruit goes well with coffee.
