CALMOS from the 2 :AM Specialty Coffee roastery is a decaf coffee for anyone who wants to enjoy a sweet and aromatic cup—even in the evening—without compromising on flavor. The Colombian Castillo and Caturra varieties create a delicate, soothing profile reminiscent of marshmallows, caramel, and almond frangipane. The coffee has a smooth, rounded, and pleasantly dessert-like character, without any unnecessary heaviness. It’s exactly the kind of decaf you can offer even to someone who’s skeptical of decaf—because in terms of flavor, it definitely doesn’t feel like a compromise.

The beans come from the Caldas region of Colombia and are produced by members of the COOP Caldas cooperative. The cooperative has been in operation since 1960 and brings together thousands of mostly small family farms in Colombia’s historic Coffee Triangle. The coffee trees for this lot grow at an elevation of approximately 1 ,300 to 1,800 meters. After harvest, the coffee underwent washed processing and was subsequently decaffeinated using the EA Sugarcane method, which employs ethyl acetate derived from sugarcane. The beans are first steamed to open their structure and then repeatedly washed with a solution that removes the caffeine.

CALMOS is perfect when you’re in the mood for coffee later in the afternoon or in the evening, or if you’re looking for a pleasant decaf for everyday enjoyment. Thanks to its sweet profile, it works well as an espresso, in a moka pot, or with milk—where the caramel and almond notes become even more rounded. But you can also brew it using a V60, Chemex, AeroPress, French press, drip coffee maker, or as a cold brew. It’s a versatile, comforting coffee for those moments when you mainly want calm, sweetness, and a full-bodied flavor without an unnecessary dose of caffeine.
