TASSE TOI from the Belgian roaster 2 :AM Specialty Coffee is exactly the kind of coffee that doesn’t need to impress you with wild fermentation to grab your attention. This Guatemalan coffee is sweet, fruity, and beautifully balanced, with a round body and a smooth, almost velvety texture. The flavor profile combines notes of raisins, cocoa, and a sweetness reminiscent of Haribo gummy candies. The result is a pleasantly juicy yet soothing cup that you’ll find yourself coming back to again and again. The name TASSE TOI comes from Quebec French and loosely encourages everything around you to step aside for a moment—because right now, you have a date with your coffee.
The coffee comes from the La Libertad area in Guatemala’s Huehuetenango region, where it is grown at an elevation of 1, 600 to 1,800 meters by small-scale producers involved in the Qawale project. Launched in 2006 under the leadership of Vides 58, the project helps small and medium-sized farmers by providing technical support, promoting more sustainable agricultural practices, and fostering biodiversity.
The lot consists of Bourbon, Caturra, and Catuai varieties and is processed using the natural method. Whole cherries are dried for 18 days in a thin layer on a concrete surface, regularly turned to ensure airflow, and covered during humid nights. Thanks to this careful drying process, the flavor profile remains clean and clearly reflects the character of the region where the coffee was grown. TASSE TOI is a great everyday coffee for moments when you’re looking for sweetness, a fuller body, and fruitiness without excessive acidity.
