Behind this coffee is Mulugeta Muntasha, an experienced farmer from the Sidama region who manages his farms with great precision and respect for the soil. The coffee trees here grow at an elevation of 2,100 to 2,300 meters above sea level, where the cooler climate and rich volcanic soil slow the ripening of the cherries. Mulugeta cultivates the 74-158 Kurume variety, one of the local Ethiopian selections known for its floral character and pronounced citrus notes. Traditional knowledge and meticulous handwork beautifully highlight the character of high-altitude Sidama.
Processing the coffee using the anaerobic natural method adds a unique depth to its flavor. After harvesting, carefully selected coffee cherries are placed in airtight plastic containers, where they ferment without oxygen. This process allows the cherries to ferment using their own enzymes, creating unique chemical reactions and intensifying the flavors and aromas. After fermentation, the cherries are sun-dried on drying tables, where further fermentation takes place, deepening their character and complexity even more.
