The Coffee Collective Ethiopia BEKELE HONEY is a filter-roasted coffee from Sidama that combines high-altitude elegance with the delicate honey sweetness of honey processing. In the cup, you will find a clean and juicy expression with notes of honey, bergamot, plums, and sweet grapes. The acidity is delicate, the body light to medium and tea-like, with a beautifully smooth texture. Thanks to the altitude of 2,200–2,350 m above sea level and the 74-158 Kurume variety, the coffee has a very precise character, with a distinctive aroma and a long, sweet aftertaste. It is a filter type that delights with its lightness, but at the same time offers enough depth for slow discovery of individual layers.
The producer is Bekele Karchara from the Sidama region, with whom Coffee Collective has been working directly and long-term. Transparency is essential for the Danish roaster, and for this lot they quote a purchase price of USD 13.2/kg of green coffee, which significantly exceeds the usual market standard. Bekele works in an area where high altitude, cool nights, and slow cherry ripening create ideal conditions for the development of complex and aromatically distinctive coffees. The result is a profile that is not only pure in taste but also consistent and sustainable over time.
Processing is done using the honeymethod , whereafter hulling, part of the sweet pulp (mucilage) remains on the bean, which influences the final character during drying. The coffee is dried slowly and in a controlled manner to preserve its purity and distinctive sweetness. The honey method does not make the coffee heavy or overripe; on the contrary, it enhances the delicate honey notes and roundness that balance the citrus and floral tones. Bekele Honey is a beautiful example of how Ethiopian coffee can be fresh, fruity, and delicately sweet at the same time, with an emphasis on detail, origin, and a fair approach.
