The Danish roastery Coffee Collective has prepared another excellent filter coffee for you, this time a washed Ethiopian Mulugeta from the Sidama region. This vibrant and sweet coffee will first captivate you with its delicate aroma of citrus blossoms complemented by notes of stone fruit, and in the finish, it will surprise you with an intoxicating bergamot aroma. This complex cup is perfect for everyday enjoyment as well as for taking a moment to slow down and discover its layered complexity.
The Mulugeta Muntasha farm in Ethiopia’s Sidama region is renowned in the coffee world for its exceptional washed, anaerobic, and natural coffees. Its main goal is to improve the status of farmers in the region and ensure fair compensation for coffee cultivation. Thanks to its high altitude—reaching up to 2,250 meters above sea level— and volcanic soil, the coffee develops a unique flavor profile with pronounced citrus and floral notes.
Mulugeta coffee has undergone a washed processing method that highlights its floral aroma and citrusy juiciness. After being hand-picked, the coffee cherries are carefully sorted to remove any unripe or damaged ones. Next, the skin and part of the pulp are mechanically removed. The beans processed in this way are then placed in water tanks for 12 to 36 hours, where they undergo fermentation. Afterward, the beans are carefully washed to remove all remaining pulp. The final step is drying on African drying beds until the optimal moisture content is reached. The result of this meticulous work is a clean and sweet cup of coffee that invites you to take another sip.
