Behind this coffee is Rodrigo Hoyos, a Colombian producer from the Huila region. Rodrigo has spent several decades building a family farm dedicated to growing Caturra, Pink Bourbon, and Gesha coffee varieties. Today, his sons are also involved in running the farm and are making a name for themselves in the world of coffee. The part of the Huila region where the farm is located is situated at a higher elevation. This location influences the coffee’s flavor profile; the resulting cups are characterized by their freshness, sweetness, and balanced body.
The Pink Bourbon variety has gained popularity among coffee lovers thanks to its juiciness and sweetness. Processed using the washed method, the coffee features a complex acidity complemented by the smoothness of chocolate and brown sugar. In the washed processing method, coffee cherries are carefully sorted after harvest. Sorting takes place in tanks of water, where defective cherries float to the surface while ripe and intact ones remain at the bottom. After sorting, the pulp is mechanically removed, followed by a short, controlled fermentation to eliminate any remaining pulp. The beans are then thoroughly washed and dried while being regularly turned. This precise and meticulous method brings out fresh and clean notes in the coffee, with a sweet aftertaste.
