Sweet, fresh, and elegantly floral—that’s this Peruvian coffee from the Danish roastery The Coffee Collective. In the cup, the juicy sweetness of ripe peaches meets the delicate aroma of elderflower and a lively citrus finish. The result is a light and clean profile that feels very refreshing while retaining a pleasant sweetness and a distinct floral note. It is precisely the combination of the rare SL9 variety and precise washed processing that gives this coffee its elegance and sparkle, allowing it to shine beautifully when brewed with a filter.
The coffee comes from the Cusco region of Peru, where it is grown by René Ccasa at the Paqchaq Pata farm at an elevation of 2,210 meters. The SL9 variety is also known in this region as Geisha Inca. Due to its low yields, it has long been overlooked, but René sees great potential for quality in it and is gradually planting it at higher elevations as well. In addition to growing coffee, he is also involved in restoring the surrounding landscape and, together with other producers, is working to reforest former cornfields.
Processing is done using the washed method, which in this case is preceded by a 32-hour dry honey fermentation. After fermentation, the beans are thoroughly washed and then dried for twelve days on raised beds. The washed process generally enhances the clarity and distinctiveness of individual flavors, while controlled fermentation can contribute to greater complexity and sweetness. This coffee successfully preserves a fresh and precise character, featuring notes of peach, elderflower, and citrus, without any unnecessarily heavy or fermented tones.
