"We roast this coffee as a simple and reliable "office" coffee – darker, with an emphasis on chocolate tones, bitterness, and minimal acidity. Pawffice is a second-grade specialty coffee that scores over 80 points in cupping, so it still belongs in the specialty category. Compared to premium coffees, however, it offers a more straightforward flavor profile without complexity or fruity notes.
Our goal with this coffee is not to wow you, but to provide an everyday companion that won't let you down and will reliably perform at work. TheNaughty Dog Roastery returns with its popular Pawffice blend – for the first time in a filter version that will be loved not only by fans of pour-over methods. This blend consists of three carefully selected beans: Colombia, Costa Rica, and Ethiopia, offering a sweet, clear profile with medium acidity and a silky body in the cup. Flavors of nougat, pralines, and forest fruits are complemented by a creamy impression reminiscent of Baileys. The filter coffee is clean and elegant, even in larger volumes – ideal for everyday drinking.
The blend is based on collaboration with small farmers from three iconic coffee regions. Colombia brings stable sweetness and rounded notes of nougat and pralines to the blend – it comes from higher altitudes, where the coffee ripens more slowly and has a more distinctive flavor profile. The Costa Rican component is exceptionally clean and elegant, with a delicate fruitiness that beautifully brightens the filter. The icing on the cake is Ethiopian coffee processed using the unconventional barrel agingmethod – after drying, the green coffee is aged in whiskey barrels, where the wood and residual aromatic components naturally influence the aroma and taste. The result is a pleasantly expanded aroma towards forest fruits and a longer, velvety finish in the cup.
The processing of the blend is based primarily on the washed method, which focuses on purity of taste and a clear expression of origin. In this process, the skin and pulp are first removed from the coffee cherries, and then the beans are fermented in water to remove the remaining mucilage. Subsequent drying on African beds or concrete terraces gives the coffee sparkle and a clean, defined expression. Thanks to the washed method, sweet, delicately fruity tones stand out in the blend without any distracting or earthy undertones. The overall flavor profile is therefore clear, consistent, and naturally elegant—ideal for everyday filter coffee.
