Another year has passed, and Kofio is celebrating its last single-digit birthday—its ninth! 🎂 And what better way to celebrate than with a coffee that’s just as playful and exceptional as this whole journey has been. In collaboration with the Amsterdam team behind DAK Coffee Roasters, we’ve created this birthday-themed Colombian coffee from the Anaya farm. Juicy, fresh, and slightly funky. You’ll find notes of strawberries, mango, and a sweet hint of bubblegum, which gives it just the right playful twist. It’s a coffee that delights and surprises with every sip, so don’t hesitate to treat not only yourself but also someone close to you!
Behind this coffee is the Aranda Gómez family from the Anaya farm in the Huila region of Colombia , specifically in Acevedo. For over 30 years , they’ve been growing coffee here , surrounded by wild nature, guadua bamboo , and fruit trees that provide natural shade and a unique microclimate. The farm is located at an altitude of around 1 , 600 meters above sea level, where coffee cherries ripen slowly, gaining greater sweetness and complexity. Sergio Darío Aranda further elevates the quality through experiments with fermentation and a focus on detail in every lot.
The processing of this coffee begins with the careful hand-picking of ripe cherries, which are then washed and disinfected to reduce microbial load. This is followed by the first phase of fermentation of the whole cherries for 24 hours in plastic tanks. After the skin and pulp are removed (depulping), the second phase of fermentation in tanks begins, lasting 48 hours. During this phase, inoculation takes place, during which yeast and a solution from pre-fermented fruit are added to the mixture. The entire process is carried out under strict monitoring of pH, conductivity, TDS, and sugar content (Brix). Water at a temperature of 38 °C is added to stimulate the growth of microorganisms. Finally, the coffee undergoes a final rinse with water at 20 °C, which ensures the purity of the resulting profile and enhances the complexity of flavors in the cup.
