Lemon Squeeze from DAK Coffee Roasters is a prime example of the best that washed Ethiopian coffee from high altitudes has to offer. The name itself suggests that you can look forward to a fresh, juicy, and distinctly citrusy flavor profile. The cup is dominated by a bright lemon tone, complemented by sweet nectarine and subtle floral nuances of wildflowers. The coffee is very clean, elegant, and lively, with a pronounced but pleasantly integrated acidity and a light, refreshing body. It is the ideal choice for filter coffee lovers who seek precise, aromatic coffees with a clear terroir and typical Ethiopian character.

This coffee comes from the area around the Rumu Damo Washing Station in Ethiopia, located at an impressive altitude of approximately 2,300 meters above sea level. It is the extreme altitude, cooler climate, and slower ripening of the coffee cherries that give rise to exceptionally complex and aromatic beans. The coffee is grown here by small farmers who deliver their cherries to a central washing station for further processing. The Ethiopian heirloom varieties used are genetically very diverse and naturally adapted to local conditions, which is reflected in the rich aroma and layered flavor profile.

Processing is done using the traditional washed method, which emphasizes purity of flavor and a clear cup structure. After the cherries are delivered to the washing station, they are first sorted in water, where unripe and damaged fruits are removed. The cherries are then stripped of their pulp and sent to tanks for wet fermentation, which lasts approximately 48 hours. After fermentation, the beans are thoroughly washed and spread out on African drying beds, where they dry for 8 to 12 days, depending on the weather. This carefully controlled process allows the fresh citrus tones, delicate sweetness, and floral aroma to stand out, making the resulting coffee exceptionallyclean, juicy, and elegant.
