Gradually, pomegranate joins in with a delicate, elegant acidity, and the whole experience is rounded off by a honeyed sweetness that lingers on the palate long after you’ve finished your cup.
The coffee comes from the Bajo Canet farm in the iconic Tarrazú region, one of the highest-altitude areas in Costa Rica. At an elevation of around 1,600 meters above sea level, the coffee trees have ideal conditions for the slow ripening of the cherries, which is directly reflected in the complexity and depth of the resulting flavor. Farmers here work with the utmost care and harvest only perfectly ripe red cherries, which are then processed as a separate microlot. Every step is carefully monitored, resulting in a coffee with a clear origin, character, and quality that truly shines in the cup.
Varietally, it is a blend of SL45 and Gesha, a combination that brings elegance, aromatic complexity, and pronounced sweetness. Processing takes place using the unconventional Raisin Honey method—first , the whole coffee cherries are sun-dried until they resemble raisins, concentrating the sugars and aromatics. They are then hulled and undergo honey fermentation without the use of water. This slow and precise process allows for deeper fermentation, greater sweetness, and a juicy, almost wine-like character. The result is a clean, intense, yet elegant cup that beautifully showcases what modern coffee processing is capable of.
