Rose, lychee, honey, and delicate oolong. Yunyun Nannan from French roaster Tanat Coffee proves that Chinese coffee has its own unique voice. The cup is silky, with light, clean acidity and a distinctive floral aroma. Pink tones intertwine with juicy lychee, honey sweetness, and tea elegance reminiscent of oolong. Light filter roasting allows the layering of flavors to fully shine through, creating a complex yet very refined expression that feels modern and confident.
The coffee comes from the Mangshi area in Dehong Prefecture, Yunnan Province, where cherries are harvested at an altitude of 1,600–1,800 meters above sea level. The producer is Olina Caicai (Yatong Cai), founder of the One Light project , which has been working systematically since 2021 to raise the profile of Yunnan coffee. Together with a team of local Q-graders and processing experts, she is building an ethical and transparent model of cooperation with small farmers and developing the potential of a region that has long been overlooked by the specialty coffee scene.
The Catimor variety lot is processed naturallyby anaerobic fermentation using a selected yeast culture. After hand-selecting ripe cherries, a seven-day fermentation takes place in closed tanks at 20 °C, which promotes the development of floral and fruity aromas. The beans are then washed with mountain water and dried on raised beds for 15 to 30 days. The result is a clean, aromatically rich, and texturally smooth cup with a clearly defined Yunnan terroir.
