This coffee is also roasted in such a way that it performs perfectly even in an automatic coffee machine.
The coffee comes from the Cerrado Mineiro region of Brazil, one of the country’s most significant coffee-growing areas, where extensive plantations lie at an altitude of around 1,100 meters above sea level. It is precisely this altitude, stable climate, and significant seasonal rainfall that contribute to the characteristic sweetness and body for which Brazilian coffees from this region are so highly prized. The Tamboril farm grows the Arara variety, a relatively young Brazilian hybrid that is gradually gaining recognition for its distinct sweetness and full body.
The coffee undergoesnatural processing, in which the cherries remain whole after harvest and are dried directly in the sun without prior hulling. Over the course of several weeks of drying, sugars from the pulp gradually permeate the bean, which is clearly reflected in the cup’s sweetness and full-bodied profile. The entire process requires regular care, turning the cherries, and monitoring humidity to ensure fermentation proceeds cleanly and the beans retain their characteristic sweet and fruity character.
