The cup immediately greets you with the distinct freshness of oranges and the juiciness of a yellow apple, giving the coffee an unexpected liveliness. This fruity component is beautifully balanced by the deep sweetness of caramel and vanilla, which create a creamy and warming sensation on the palate. The entire flavor profile is rounded out by subtle notes of freshly baked sponge cake, making the coffee incredibly drinkable and complex.

This exceptional coffee comes from the renowned Huila region, the heart of Colombian coffee production. Castillo variety beans ripen at an impressive altitude of 1,800 meters above sea level, directly beneath the majestic Nevado del Huila volcano. It is precisely this unique environment, with significant temperature differences between day and night, that forces the coffee cherries to ripen more slowly, thereby concentrating more sugars and aromatic compounds within them. Behind every package lies the hard work of small family farms spanning just 1 to 3 hectares. Here, farmers apply expertise passed down through generations. Huila is a guarantee of quality, which you’ll experience in this decaf as purity and intense sweetness—so typical of this terroir.

What makes this coffee truly revolutionary is its decaffeination method, known as the Sugar Cane process. Unlike aggressive chemical methods, this process uses a natural compound (ethyl acetate) obtained through the fermentation of sugarcane. Fresh green beans are exposed to steam and then washed in this natural bath, which gently binds to and removes the caffeine while leaving all the flavor and aromatic oils in the bean. This means that the coffee retains its original Colombian character, purity, and acidity.
