A wonderfully funky coffee named after the son of the roasters at Merrybeans. HENRY—or Jindřišek—has been blessed with a very distinctive flavor profile. You’ll detect a playful sweetness reminiscent of bon-pari, a pleasant grapefruit acidity, and finally, notes of rooibos tea in the cup. This coffee is lively, pleasantly juicy, and will definitely be enjoyed by anyone looking for decaf options that still offer interesting character. Especially now in the spring, the funky HENRY is absolutely perfect. However, it’s best enjoyed on its own, as its specific flavor profile won’t stand out when combined with milk.
The beans for this coffee come from the Nogales farm in Colombia, which you may already know from Merrybeans’ Christmas limited edition. The farmers there really take great care, and the result is always excellent coffee. And now, decaf as well! The coffee cherries are sorted using the floating method and then fermented for 24 hours. This is followed by careful washing, drying on raised beds, and hulling. But that’s not all. The beans are then heated in a water bath at 40 °C for 4 hours, with this step repeated twice in total, significantly reducing the caffeine content. Next, the pulp—the natural fermenting juice from the coffee cherries—is added, and the mixture is macerated for another 24 hours. Finally, the coffee is washed one last time and dried.
DECAF HENRY is roasted for drip brewing, but don’t be alarmed if the beans look a bit darker. This is caused by the decaffeination process. To enjoy it to the fullest, we recommend a longer extraction. This will make your cup full-bodied and sweet. Cheers to you and Jindřišek!
