This lot comes from the Colombian farm Finca Nogales, which appears in the Merrybeans portfolio for the third time. The Bourbon Aji variety is grown here at an altitude of around 1,750 meters above sea level, where slower ripening enhances the complexity and aromatic depth of the beans. The farm emphasizes careful hand-picking and selection—the cherries are first sorted using the floating method to remove lower-quality fruits, and only the best proceed to further processing. Thanks to this, the coffee maintains high quality and a very clean flavor profile.
The processing is washed, but with an unconventional twist. After hulling and fermentation, the coffee is dried in contact with flowers, a step that significantly influences its final flavor. During drying, subtle floral and herbal aromatic compounds are transferred to the beans, which then develop into a distinctive and unique profile during roasting.
