Natural Mosto Fermentation combines a slow natural process with controlled fermentation in coffee cherry juice. Carefully selected fruits are placed in airtight tanks, where they are added to mosto from the previous lot, rich in natural yeast. Anaerobic fermentation takes place over dozens of hours, and subsequent slow drying in whole cherries deepens the sweetness and highlights the tropical tones of Geisha. This process gives the coffee a silky texture, intense aroma, and layered profile that makes this lot a true "stellar origin."
