Colombia Melone Candy from Kaffa Roastery is a bold and playful coffee roasted for drip brewing that captivates from the very first sip. The flavor profile features juicy notes of watermelon, raspberries, candy, bubblegum, and subtle mint. The cup is sweet, juicy, and highly aromatic, with lively fruity acidity and a long, fresh finish. An ideal choice for lovers of modern, experimental coffees that offer a surprise beyond classic flavor profiles.

The coffee comes from the Colombian regions of Huila, Tolima, and Caldas, where it is grown by smallholder farmers associated with the San Agustín Coffee Producers project. The cherries are hand-picked only when fully ripe and then sent for processing at El Vergel Estate, one of the most famous and innovative farms in Colombia. An altitude of around 1,750 meters above sea level and local conditions give the coffee high sweetness, distinctive aroma, and a clean flavor profile.

The Caturra and Colombia varieties undergo an experimental Honey & Co-Fermented with Fruits processing method here. First, whole cherries undergo anaerobic fermentation in sealed containers, followed by fermentation of the beans in the pulp using yeast and watermelon. This process significantly influences the resulting flavor profile, imparting the coffee’s characteristic sweet, candy-like notes and fruity juiciness. The subsequent slow drying helps preserve the purity of flavors and complexity. The result is a unique and unforgettable filter coffee for anyone who enjoys exploring new directions in the world of coffee.

Went through the entire bag without getting a good cup. Too easy to overextract, every cup was harsh and bitter. Went for a coarser grind than usual, dropped temp even down to 80C, shortened the ratio to 1:14, TBT was as low as 1:40 yet it still tasted harsh. Maybe coferments are usually like that, or I have a skill issue with brewing. Gave up and started using the switch instead of v60, no luck there neither.

Hello Kofio, how is this coffee flavoured/infused? It’s a well known fact that co-fermenting with real watermelon doesn’t translate into watermelon aroma in coffee beans. Thank you for the transparency.
Hello, Kristina. This coffee gets its flavor from a special co-fermentation process in which coffee cherries are fermented together with fresh watermelon in sealed containers. During this process, the beans naturally absorb the fruit juices and aromas, which are then firmly locked inside them thanks to the pressure and the natural action of the yeast. The flavor comes from the purely experimental Honey & Co-Fermented processing method. Have a nice day! :)
